Piave is a cow’s milk cheese produced with milk from the Bruna Alpina breed, which feeds on fresh foliage from surrounding mountain pastures. The rich high protein milk is particularly apt for cheesemaking and imparts the special sweetness so characteristic of Piave. It is DOP protected and the only authentic Piave is produced in the Dolomites area of Belluno province of Veneto. Extremely versatile. 6 month aged
